Flow & Fire : Butternut Squash & Garbanzo over Teff

How many times have you heard this before? And how many times have you thought about why or what it means?
Few days ago as I was exploring the book “Rainbow Diet” by Deanna Minich, phD, I was not only fascinated by all the great information but also it made me think about when I eat what I eat and!

And Yellow color food relates to “FIRE”, including organs and systems such as: Liver, Stomach and…

You can trace similar info when you look at how Ayurveda looks at food and body or how traditional Chinese medicine approaches the subject or just by looking at the Chakra system.
All that to say that this Squash & Garbanzo Bowl is the perfect choice if you’re looking to get the flow going and light the fire!

1 / 2 cup of cooked TEFF 
1 Large Sweet Potato peeled and chopped to smaller pieces 
2 Large Carrots peeled and sliced 
1 Small Butternut Squash peeled and chopped to small square pieces 
1 Cup Garbanzo cooked and drained
1 Large Zucchini Sliced 
5 Medium or large Cremini Mushrooms sliced 
1 /2 Fresh lemon juice
1 teaspoon Tahini
Dash of Paprika
Salt & Pepper 
Dash of Olive oil

1- Set your oven for 425 F
2- Cook your TEFF as instructed on the package. I use Bob’s Red Mill 
3-  Lay a baking tray, add the chopped Butternut squash, dash of Olive Oil, salt and pepper and bake for 35 min and set aside 
4- Lay a separate baking tray, add the Sweet Potato, dash of Olive Oil, Paprika, salt and pepper and bake for 15 min. Bring the tray out, add Zucchini, Carrots and Mushrooms. Mix well and bake for another 10 min.
5- Bring the tray out, add the Squash, and the cooked Garbanzo to it and put it back in the oven for another 5 min.
6- In a small bowl add fresh Lemon juice, Tahini, dash of pepper and mix well. Add a few drops of water as you’re mixing to create a consistent (not too thick or too watery) dressing.
7- Take the tray out and serve your warm salad in a bowl of your choice over TEFF
8- Add your Tahini dressing on top, mix and Bon Appetit!
