I didn’t know what Kale was until I moved to the US almost 9 years ago. For some reason never came across it no matter where I lived. The introduction was gentle and I immediately fell in love with it. Honestly no surprise, when it comes to produce, vegetables and fruits, I’m a total junkie!
This is one of my all time favorite ways to eat Kale, it’s easy, fast, delicious and nutritious.
1 or 2 bunch curly Kale
1 large Lemon
2 Tablespoon Pepitas (Pumpkin seed)
2 tablespoon dried berries or golden raisin
1.5 tablespoon Tahini
Salt & Pepper to taste
1- Wash kale, remove the stem and chop the leaves to medium size (really freestyle)
2- Add chopped kale + Pepitas + dried Berries/Golden Raisins to a big bowl.
3- In a separate smaller bowl, juice the lemon, add the tahini, salt and pepper. Whisk with a fork till it’s mixed and texture starts to thicken. Add 1 tablespoon of water to the mix and whisk again till you have a dressing like consistency (not too thick and not too watery). Add water as desired to create the consistency you like.Once ready, poor it over the kale and mix it well.
PS: If you like to make it a little more juicy, you can chop a full avocado and add to your salad.
