This is what I had for lunch yesterday, the happiest bowl ever and so easy to make!
I was literally smiling and getting so excited as I was stirring them over the stove, seeing all these colors come together just makes my day, every time!
I’d say get creative with the veggies you have at home but this is what I did:
1/ 2 medium onion
1/ 2 medium Zucchini
1 large carrot peeled
1 cup chopped red cabbage
3,4 Cremini Mushrooms
A handful of cherry tomatoes
A handful of baby spinach
1 / 2 cup red Lentil Rotini(I use Tolerant organic)
1/ 4 teaspoonTurmeric
1/ 8 Mustard seed, Paprika, Cumin and Ground Ginger
And if you want to add Salt & Pepper to taste
1- Chop all the veggies and have them ready on the side
2- In a pan, ¼ cup of water and turn the flame on, as the water starts to boil and evaporate, add the onions to sauté.
3- In a separate pot boil 1 cup of water. Once water is ready drop your Red Lentil Rotini in and follow the instructions on the package or cook till almost soft. Once ready drain and set aside
4- After 3 min you can start adding all the spices, one at a time, apart from turmeric, and stir.
5- After 10- 12 min onions are ready, you can add the turmeric and stir some more.
6- Start adding your veggies from the hardest ones like carrots, one veggie at a time. Stir for 1,2 min then add the next veggie in line and so on till all of them are in apart from the Spinach. This should take no longer than 10 -15 min.
7- Add the Rotini and mix them all really well.
8- Add the baby spinach, mix quickly and remove from the stove, so the spinach doesn’t get too soft.
9- Serve in a Bowl and enjoy!
*** You can add some Avocado slices on the side, some hemp seeds or sesame seeds on top.
*** As always I suggest looking for fresh, local and possibly organic vegetables and produce.
This whole process took about 30 min, give or take, from prepping and chopping to ready to eat on the table. It was truly delicious, nutritious and colorful with no unnecessary ingredients and no animals were harmed in the making of this meal, which makes it even happier!
