This one is a favorite in my house, as a matter of fact, my lentils are cooking as I’m writing this. It’s easy, healthy and delicious.
1/ 2 Cup French lentil
1/ 2 Fresh Lemon
2 Tablespoon of chopped Parsley
1/2 Tablespoon Olive oil
1/ 4 Teaspoon dried Mint
1/ 4 Teaspoon dried Oregano
Salt & Pepper to taste
You can add red or orange bell pepper or/and fresh basil if you like.
1- Cook the lentils for about 30 min till they’re soft but not mushy.
2- Chop the parsley
3- Juice the lemon
4- Add cooked lentils to a bowl, add Lemon juice, Olive oil, dried Mint and oregano, Salt and Pepper and mix.
5- Finally add the parsley and mix gently one last time
