Eating in a bowl is my favorite way of eating almost any food, and when the bowl trend picked up I was like; finally everyone is with the program 🙂
Here’s a quick recipe for a simple but nutritious vegan bowl that will make you fall in love with the kitchen, again!
1 Medium tomato
1 medium persian cucumber
¼ cup Quinoa
½ cup Garbanzo
2 tablespoons Hummus
1 cup fresh baby spinach
A touch of cilantro or parsley
Salt and pepper to taste
1- Cook your Quinoa as instructed on the package or if you buy it bulk follow the instructions you’ve been given, and set aside. If you don’t like Quinoa or it’s not available to you you can use brown rice.
2- Cook your Garbanzo ahead of time and keep in the fridge. That i sif you’re buying it bulk which I highly recommend you do but if that’s not an option for you then choose the best possible canned option that is already cooked and ready to use.
3- Chop your tomato, cucumber and avocado into desired size.
4- Grab a fairly deep bowl, and start layering and placing every element you desire. Add your Hummus on top and top the bowl with some Cilantro or Parsley to taste.
5- Squeeze some fresh lemon on top, add olive oil,s alt and pepper as you desired and bon appetit!
