Do you remember the cartoon Popeye? As a kid I was always obsessed with the amount of power and energy he would get once popping a can of spinach!
I truly believe that had an impact on me eating more Spinach back then and even falling in love with it as I grew up.
Spinach is a superfood, It’s loaded with tons of nutrients in a low-calorie package. Dark, leafy greens like spinach are important for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals. According to the United States Department of Agriculture (USDA), a 100-gram serving of spinach contains 28.1 milligrams of vitamin C, 34 percent of the daily recommendation. (Medical news today)
There are so many ways you can enjoy Spinach daily. From adding it to your favorite smoothie to making a soup.
This salad is one of my personal all time favorites, off course tones of Spinach and don’t even let me get started with Figs, I’m obsessed!
4 cups Fresh Baby Spinach
8-10 Medium Figs
Vegan Feta (I use Violife Just like Feta) as desired and it’s also optional
1 Teaspoon Hulled Hemp seed
1/ 2 Freshly squeezed lemon juice
1 Teaspoon Olive oil
Salt & Pepper to taste
1- Drop your baby spinach in a salad bowl
2- Chop your figs in half or in 4 pieces, make sure you cut off the little tail and add it to the salad bowl
3- If you’re using the feta cheese, cut as much as you want to add, my suggestion is go moderate :). Then using your hands crumble the feta over the spinach and figs.
4- Add the hulled hemp seed, lemon, olive oil and salt & pepper
5- Mix well and bon appétit!
